14ozcanned crushed tomatoes400g
1tsppaprikaregular or smoked
1TblItalian seasoning

10ozbaby potatoes280g
1medium-sized red onion
1large yellow bell pepper
3thick sausages
½cupcrumbled feta3 oz, 85g - or a big handful
Instructions
Preheat your oven to 400°F (205°C) conventional or 375°F (190°C) fan (convection). Line a large sheet pan with parchment paper or a silicone mat if desired.
Prepare ingredients: In a large bowl, mix the crushed tomatoes with all seasonings and spices. Cut baby potatoes, red onion, and bell pepper into ½–1 inch (1½–2½ cm) pieces. Add them to the bowl and toss until well coated.
Add sausage: Cut the sausage into 1½ inch (4 cm) chunks and gently fold them into the mixture. Try to keep the pieces intact as much as possible.
Spread & roast: Spread everything in a single layer on the sheet pan. If doubling the recipe, use multiple pans for even roasting. Bake on the middle rack for 30–40 minutes, or until the potatoes are tender and the sausage is slightly caramelized. Stir once halfway through for even browning (optional).
Finishing touches (optional): Sprinkle crumbled feta over the pan during the last 5 minutes of baking. Garnish with fresh herbs like parsley or basil before serving.
