This is a perfect one-dish meal that balances savory, sweet, and hearty flavors. You’re essentially creating a rustic braise with simple ingredients that transform into something deeply satisfying.

All of the ingredients are tossed in seasoned crushed tomatoes. The sauce creates a moist cooking environment, preventing the ingredients from drying out. The acidity in the tomatoes also helps break down fibers in the sausage and potatoes, making them more tender. Finally, as the sauce reduces in the oven, it concentrates flavors and thickens.

As the sausage roasts, it releases fat, salt, and meaty flavors into the pan, coating the vegetables and making everything richer. The golden-brown, crispy edges that develop are thanks to the Maillard reaction, which occurs when the surface of the food reaches temperatures above 285°F (140°C). This chemical reaction between amino acids and sugars creates hundreds of new flavor compounds, giving those browned bits their irresistible, slightly sweet taste. I have tested this recipe with herby, smoked, and plain sausage, mostly a mix of veal and pork. A spicy or sweet sausage would also work great here. Feel free to play around according to your preferences and what is available near you. It is important to use thick sausage to prevent them from drying out during cooking.
  • Baby potatoes: These small potatoes hold their shape well while becoming tender in the sauce. No need to peel them—just wash and quarter them. 
  • Red onion: A medium-sized red onion adds sweetness and depth to the dish. It caramelizes slightly as it bakes, enhancing the overall flavor.
  • Yellow bell pepper: A large yellow bell pepper packs flavor, sweetness, and a pop of color. 
  • Crushed tomatoes: I recommend using a can of Mutti Pulpa. These finely chopped tomatoes taste vibrant in every season and are made with just two ingredients: sun-ripened 100% Italian tomatoes from the Emilia Romagna region and a pinch of salt.
  • Spices and seasoning: I like to use paprika, Italian seasoning, garlic powder, and red pepper flakes for this recipe. I also season to taste with salt and pepper, keeping in mind that the sausage and canned tomatoes may already have some salt.
  • Feta (optional): I like to add some crumbled feta to the dish during the last few minutes of cooking. Fun fact: because of its low moisture content, heat stable protein structure, and saltiness, feta softens during cooking without loosing its shape. I recommend buying a block of feta and crumbling it yourself for the best quality, flavor, and texture.
  • Fresh herbs (optional): If desired, you may serve with fresh basil, parsley, or thyme. If you don’t have fresh herbs on hand, don’t worry, the dish will still be extremely flavorful!

How to Make this Sheet Pan Dinner (Plus Tips and Tricks)

This sheet pan dinner comes together in just a few simple steps:

  1. Preheat: Remove your sheet pan and preheat your oven to 400°F (205°C) conventional or 375°F (190°C) fan. If you are doubling the recipe and need to use multiple baking sheets, the fan setting of your oven is a better choice to encourage even cooking. I like to line my sheet pan with parchment paper or a silicone mat.
  2. Prep: If you are using baby potatoes, peeling is not necessary. Cut the baby potatoes, red onion, and bell pepper into similarly sized, bite sized pieces (½-1 inch or 1½-2½ cm). Cut the sausage into slightly larger pieces, to avoid them drying out during cooking (1 ½ inch or 4 cm).
  3. Season and toss: In a large bowl, mix the crushed tomatoes with all the spices and seasonings. This will ensure that the flavors are evenly distributed in your dish. Toss the potatoes, onion, and pepper in the seasoned sauce until everything is well coated. Then gently fold in the sausage chunks. Your sausage may break up a bit – that is OK but try to avoid it as best you can.
  4. Spread it out: Pour the mixture onto a large sheet pan and spread everything into a single layer. Keeping everything in one layer helps the ingredients roast rather than steam.
  5. Roast until tender: Roast in the middle rack of your oven until the potatoes are tender and the sausage is cooked through and slightly caramelized, about 30–40 minutes. You may stir once halfway through to ensure even browning, although this is not necessary if you prefer a more hands off approach.
  6. Finishing touches: For extra creaminess and a salty pop, sprinkle crumbled feta over the pan during the last few minutes of baking. If you like, garnish with fresh herbs before serving.

  • 1 Tbl Italian seasoning
  • ¼ tsp red pepper flakes (Adjust according to your spice tolerance.)
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 10 oz baby potatoes (280g)
  • 1 medium-sized red onion
  • 1 large yellow bell pepper
  • 3 thick sausages
  • ½ cup crumbled feta (3 oz, 85g – or a big handful)

Instructions
 

  • Preheat your oven to 400°F (205°C) conventional or 375°F (190°C) fan (convection). Line a large sheet pan with parchment paper or a silicone mat if desired.
  • Prepare ingredients: In a large bowl, mix the crushed tomatoes with all seasonings and spices. Cut baby potatoes, red onion, and bell pepper into ½–1 inch (1½–2½ cm) pieces. Add them to the bowl and toss until well coated.
  • Add sausage: Cut the sausage into 1½ inch (4 cm) chunks and gently fold them into the mixture. Try to keep the pieces intact as much as possible.
  • Spread & roast: Spread everything in a single layer on the sheet pan. If doubling the recipe, use multiple pans for even roasting. Bake on the middle rack for 30–40 minutes, or until the potatoes are tender and the sausage is slightly caramelized. Stir once halfway through for even browning (optional).
  • Finishing touches (optional): Sprinkle crumbled feta over the pan during the last 5 minutes of baking. Garnish with fresh herbs like parsley or basil before serving.
